6 Months

Where did the time go? It does not feel like Henry should be six months, but he is. He is getting bigger and cuter everyday. He is still pretty small for his age but we expected that since we are both pretty small people. He is still, and will forever be, a ladies man. He loves flirting with all women no matter the age. 




Not only can he roll but he can roll both ways. So now when I put him in one place he rolls to his desired destination. He also has started to scoot on his butt. It's pretty entertaining to watch. He still isn't crawling but has started showing some interest. He would rather sit on the floor than lay down. He just started using more sounds while talking. Just last night he started putting together his ah,la, and ba sounds. So he's pretty much a genius. Look for his children's book set to release in a few months. 




His hair has curled up this month and is officially out of control.  I'm considering baby hair gel to keep it contained. Solids foods are happening. Avocado so far is the favorite. We start peas tonight. He had some mango and loved it as well. Seriously though who doesn't love mango. Dogs are fun now. Trying to make out with dogs is even more fun.  Just for fun I did a comparison of one month to six months. It's crazy how much he has changed.

Why Are My Cookies Pink?

That's right pink cookies. After the eating adventure we had today we needed a healthy-ish cookie. Today we went to one of our favorite restaurants Frank. If you ever make it to Austin you need to go there. Anyways, we split two amazing things. I ordered a house made hot dog, wrapped in bacon, deep fried and topped with pimento cheese and coleslaw. Rob got a house made hot dog topped with mac-n-cheese and BBQ sauce.

 Enough about our ahhhmazing lunch. Now to why my cookies are pink. A while back I found this recipe for beet chocolate chip cookies. That's right people BEETS! So I found the recipe over at beantownbaker and thought I would try them out. Let me just say they are way better than I expected. Not too sweet but sweet enough. I made a few slight changes. 

ingredients:

3/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/3 cup shredded raw beets
1 Tbsp coconut oil
1/2 tsp vanilla
2 1/2 Tbsp water
1/4 cup sugar
1/4 cup mini chocolate chips

directions:

Combine all dry ingredients and stir.
In a food processor, pulse the shredded beets for a few second 5 times. Add the oil, vanilla, and water and process again. Scrape down the sides of the bowl. Add the sugar to the food processor and pulse until completely combined. The mixture will be very liquidy.
Make a well in the center of the dry ingredients and the beet mixture. Mix to combine.
Stir in chocolate chips.
Drop by tablespoonfuls onto greased cookie sheet. Bake 10-12 min at 350.


So give them a try. Yes, they do have beets in them but you can't tell. I've already ate three and don't plan on stopping anytime soon. Well maybe after five. I need to learn a little self control. Enjoy!
